Updated for 10.5.X's elemental adjustments and new surface types.
Physical damage is now split into three types: Impact (most effective against shields), Puncture (most effective against armor), and Slash (most effective against health).
A quick view of which weapons primarily carry which damage type:

SHIELDS - Magnetic best, Puncture worst
ARMORS - Puncture/Corrosive/Radiation best, Slash worst
HEALTH - Best VS Corpus: Viral + Electric. Best VS Grineer: Corrosive + Heat (due to armor) for light units; Viral + Radiation for bosses/heavies.
INFESTED HEALTH - Best VS normal units: Gas (light-units) or Heat + Corrosive (combo light & Ancient). Best VS bosses: Corrosive + Blast.

Slash: Target bleeds/health damage over time (can proc even if shields are still up)
Heat: Sets target on fire for minor damage over time; target may panic

Electric: Chain lightning effect; may paralyze target
Toxin: Health damage over time. Toxin damage itself bypasses shields.
